Mie noodles with vegetables and the finest beef fillet from the wok

  • Ingredients

    Ingredients for 4 people:

    400 gr fillet of beef
    250 ml stock, vegetable stock (250 ml hot water,
    plus 1 teaspoon of instant stock)
    Alternative: we like to use the ready-made organic broths (various types, e.g. ramen, pho...) from J. Kinski
    250 g Mie noodles
    100 g broccoli
    100 g cauliflower
    1 red bell pepper
    1 red onion
    1-2 carrots
    1-2 clove(s) of garlic
    some ginger, peeled (approx. 2 cm)
    2 tbsp mirin rice wine seasoning
    50 ml soy sauce
    50 ml or according to taste → hoisin sauce
    2 tsp oil (sesame oil, rapeseed oil for the pan)
    salt
    pepper

  • Preparation

    Cook the Mie noodles according to the packet instructions, drain and leave to drain.

    Finely slice the onion, finely chop the garlic and ginger. Wash the cauliflower and broccoli and cut into thin florets. Cut the peppers into thin strips and slice the carrot(s).

    Preheat the wok, fry the fillet of beef in oil with a little salt and pepper, then remove from the pan and set aside. Then briefly fry the garlic and ginger in the pan, deglaze with mirin, add the vegetables and fry again.

    Season everything with vegetable stock, soy sauce and hoisin sauce. Add the noodles and fillet - allow to warm briefly ....
